Watermelon Gazpacho

It is mid August and the farmer’s markets are booming with fresh fruits and veggies. It’s also incredibly hot and I’m craving something refreshing and energizing. This recipe is inspired by watermelon because it is naturally sweet and hydrating. Exactly what’s called for on a hot summer day!
What I love about this recipe :
- It is loaded with anti-oxidants, potassium, lycopene, vitamin C, and vitamin A, making it heart healthy.
- Watermelon is a true hydrator on a scorching summer day due to the high water content and electrolytes.
- This is a raw food recipe and you won’t have to turn the stove or oven on. This is a good thing when the temperature outside is almost 100 degrees!
- The recipe is easy to make and doesn’t require much time, that’s always a plus.
The flavors are amazing! The watermelon, peach and mango are deliciously sweet. The jalapeño lends a hint of heat, while the ginger adds a nice little zing. Blueberries and strawberries balance it out with a bit of tartness. Then we top it off with some lime and mint for a fresh finish. Yes, please!
This watermelon fruit-gazpacho is best served chilled. It will keep for up to 3 days in the refrigerator. However, I think it is best to eat soon after making when it is super fresh.
Ingredients :
- 10 cups of watermelon (8 cups roughly chopped, 2 cup diced)
- 2 peaches
- 1 cup of strawberries, diced
- 1 cup of mango, peeled and diced
- 1 cup of blueberries
- 1/3 cup juice of lime
- 2 Tablespoon of fresh mint, roughly chopped
- 2 teaspoons of jalapeno pepper, minced
- 1 teaspoon of ginger, minced
- ¼ teaspoon of sea salt
Instructions :
- Chop watermelon and add to vita-mix and blend until smooth. Add 1 peach, lime- juice, mint, ginger, sea-salt and blend until combined. Transfer to a large bowl.
- Add remaining watermelon, blueberries, strawberries, peach (pitted and diced), and mango to watermelon puree. Chill in refrigerator for 1-2 hours.
- Garnish with fresh mint and wedge of lime before serving. Enjoy!
